Steelmans Bay Selects

Size: 3.0-3.5”
Cultivation Method: Seed is planted in bags that rest in bottom-cages for 8-12 months.  At approximately 1.5” the oysters are transferred to floating cages where they are exposed to increased tidal flow.  At approximately 2.5” the oysters are transferred to grow out trays where they are finished for market.  These trays are situated on the bay bottom adjacent to the marsh bank.  Seasonally a diverse mix of algae bring mineral flavor to the oyster and hues of green to the shell.
Flavor: Crisp, clean salt up front followed by a mineral finish.

Sunflower Island Petites

Size: 2.5-2.75”
Cultivation Method: Seed is planted in bottom dwelling cages for 8-12 months.  At approximately 1.5” the oysters are transferred to floating cages.  Throughout the warmer months the oysters enjoy an endless supply of food and wave action as they float on the surface.  As temperatures dip, these oysters hibernate nestled out of the elements just off the bay bottom to be returned to floating gear when the water warms.  The result is a uniform cupped shell bursting with crisp, briny meat.
Flavor: Snappy and briny, start to finish.
